Aberdeenshire Highland Cattle are farmed in the most natural of ways. The cattle live a lifestyle that enables their growth of muscle which enhances the quality both in texture and flavour of the beef.
The life style afforded to Aberdeenshire Highland Cattle lends the cattle to live a healthy life, that requires little need for medical intervention and so has a generally good calving performance and good mothering ability. This gives the calves the best possible start to life when they literally hit the ground running. The calves are born outdoors and continue to thrive and grow though out their life reaching maturity at generally below 30 months of age with a live weight of between 550 – 650KG prior to slaughter.
Studies have been carried out to investigate the health and tenderness benefits present within Highland Cattle beef compared to commercial breeds. The characteristics show positively in favour of the Highland breed proving statistically significantly richer in protein and iron aswell as very low in fat and cholesterol which lends itself to the health conscious consumers wishing to purchase a healthy and nutritious beef.
Aberdeenshire Highland beef is processed to a high standard of skilled workmanship using our own on farm butchery facilities by our female butcher Jenny, adding value again to the product at every stage, including storage and maturation, butchery cutting, presentation and packaging.
The team who work with Grace to produce the beef are all committed to maintaining the quality throughout the life of the cattle from the rearing of the of the calves to the delivery of the beef. The beef carcarses are hung for maturation for a minimum of 21 days or as specified by the customer to allow for the tenderness and fast to be developed and enhanced.
